Penny’s Sweet Potato Brownies

This is a recipe that never gets old and one that you will never get enough of! I (and family and friends) actually believe that these brownies beat the ordinary brownies. They are fudgey, sweet, moreish and CHOCOLATEY!!

Oh… they are also vegan friendly, easy to make and child friendly! An all round winner then?! Yeaaa!

So you obviously need to SAVE this recipe, write it down and stick it to your fridge, it is a KEEPER, trust me!

Dry Ingredients

  • 1 cup oat flour (use food processor to grind down oats into flour)
  • 1 cup almond flour
  • 1 tsp baking powder
  • 4 tbsp cocoa powder
  • 2 tbsp coconut sugar (optional, better for kids or add 1/4tsbn stevia)
  • 1 tsp cinnamon (it’s So good for you!)

Wet Ingredients

  • 3 medium sweet potatoes (baked for 1 hour, until soft and are now cool – or almost cool! remove skins once baked its easier)
  • 2 flax eggs (or 2 organic eggs if not vegan)
  • 1 tsp vanilla extract
  • 3-4 tablespoons maple syrup
  • 1/2 cup almond milk

Also Add

  • Large handful raisins
  • Handful dark choc chips

 

What you need to do

Turn your oven onto 180 and lightly grease a brownie tray (roughly 27x20cm). Apply some grease proof paper.

  1. In a large bowl mix all your dry ingredients together and set aside.
  2. In a food processor, process your soft sweet potato, slowly add all the other wet ingredients into the processor until well combined.
  3. Add the wet mixture to the dry mixture and gently stir with a wooden spoon until combined. Then fold in the chocolate chips and raisins.
  4. The mixture will be very thick/sticky. Add it to the prepared brownie tray and pop it into the oven to bake for 30-45mins. Keep a watchful eye after 30 mins ads you do not want these to go dry (very unlikely!). When a tooth pick comes out of the centre clean – the brownies are ready.

Leave to cool for 10 mins before removing from the tray then gently ease out and place onto a cooling tray. You can slice and eat them warm (yum!) or wait to the cool completely.

They will keep well for around 4 days.
