Winter Warmer……Sweet potato, coconut and chilli soup

Today, we have Featured Coach Miriam Sunter from Glasgow providing a delicious recipe to keep you warm during this cold snap!

Packed with nutrients, this is a winner and so easy to make. Give it a try!

 

Ingredients (makes 4 bowls)

600g Sweet Potato. Peeled and diced

1 Medium Red Onion

1 Red Chilli

200ml Light Coconut Milk

2 Tablespoons butter

Chilli Flakes

Chicken Stock Cube in 400ml Water

Melt butter in a pan and sweat the potato,onion and chilli. Add stock and simmer until veg is soft. Add the coconut milk and chilli flakes (add as much or as little as you wish) once cool, add to blender and blitz until smooth.

Done!……It’s that easy folks
